The key word is always ' biodiversity à ', absolute respect for natural balance of things, where everything

has a fundamental function. I can count on a capable team of men who have the same respect for the vineyard as I do and they know the art of

making wine in a certain way. We prefer to work the land by hand and we only use our organically grown grapes without using pesticides, fungicides, herbicides, chemical or synthetic fertilizers. We consider the spontaneous essences that grow in the vineyard to be important and help the soil to oxygenate and feed itself. Sometimes we plant the field bean in the ground of the vineyard and then overturn them in spring, respecting the surrounding plants that are a resource. We use the clones of these native vines and produce in addition to the Etna Doc, also a wine from pre-vines filossera, which are in fact grapes relics of Etna. We only use our grapes. The harvest is done only by hand, selecting the best grapes first in the vineyard and then in the cellar. As I said at the beginning 'The important work is done first in the vineyard ': healthy grapes, indigenous yeasts and very low sulfur content. And then, we taste it, from the first to the last moment, to understand it and respect its times and needs, as is done with a growing creature. ​

The Earth is a gift that we inherit and that we must keep for future generations, we are its simple guardians and our task is to always treat it with care and love.
I tlak to the earth, she listens to me and replies, in authentic silence. I often find myself walking around the estate, through the dry stone walls of the terraces which, like works of art, give geometric grace to the mountains; we saved this valley and, thanks to the monks and to Monaci, it will be saved forever.
